Add onions, stir and let the onions sweat for 2-3 minutes. Add minced garlic, stirring regularly. Cook garlic and onions until fragrant. Add rinsed quinoa to pan, stirring regularly for 1-2 minutes to toast and bring out the nutty flavor. Carefully add broth or stock, and bring to a boil. Reduce heat to low and simmer for 15 minutes. Remove from heat and leave covered for 5 minutes and then fluff with a fork. Season with salt & pepper to taste. Serve warm, or spread onto a cookie sheet to cool for future use.
