Here is how you make Cheesy Salsa Quinoa:

1. Cook the Quinoa on the stove according to the directions on the box (Usually, this is 2 cups water per 1 cup quinoa, bring to a boil, then simmer for 15 minutes covered).2. While the Quinoa's cooking, cut up an onion in small pieces. You'll only need about a cup of the onion for this recipe (roughly half of the onion), so you can use the other half for another meal if you so desire.3. As for the petite diced tomato: you can make this fresh yourself or use the canned variety. If you do the can, use about half the can - understand the can will add extra sodium to your meal, so if you desire wash and strain the tomato.3b. This part's up to you: I put the onion and the tomato in a microwave-safe dish for about 2 minutes to warm them up prior to adding to the quinoa. It's fine if you don't and wish to add them at room temp.4. Once the quinoa hits the 15 minute mark, stir it around a bit to make sure it looks done (taste test if you so desire).4a. At this point make sure the temp on the stove is on a low, but not off setting.5. Toss in the butter (As for the butter, if you want to use less 2 tbsp for this recipe is fine - you can even sub for olive oil), stir into quinoa until the butter melts.6. Add in the tomato, onion, salt, and pepper. Stir around for a minute or two.7. Add the cup of shredded cheese, stir around.
