Here is how you make Quinoa Tabbouleh:

In a saucepan bring water to boil. Add Quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes, until water is absorbed. Cool to room temperature, fluff with fork.In a large bowl combine tomatoes, cucumber, green onions (scallions), carrots and parsley. In a small bowl combine olive oil, sea salt, and lemon juice and beat with fork to emulsify.
