2 small zucchini (8oz) sliced 1/2 inch thick

Here is how you make Ratatouille:

Cook each vegetable separately over medium heat. Either in 4 pans or the same one transferring the cooked item to a large pan. Use 1 Tbsp. oil and 1/4 of the garlic for each vegetable. Cook eggplant for about 18 minutes, until completely soft. Cook onions for 18 minutes until soft and caramelized. Cook zucchini until tender, 12-14 minutes, then turn up heat to brown lightly. Cook tomatoes about 9 minutes until wrinkled and barely holding their shape. Season each vegetable just before they're done. Set a large saute pan over medium heat.
