2 2/3 cup jasmine rice, uncooked

In a saucepan combine - dried beans, water, garlic and salt.Bring to a boil.Cook, covered over medium heat for about 2 hours - until beans are tender.Add the coconut milk, pepper, onion, thyme and whole fresh peppers.Bring to a boil.Cook, covered at a simmer for about 25 minutes - until rice is done and liquid has been absorbed.Makes 12 servings.Note - If you follow the recipe exactly this dish is on the light side seasoning wise, as it is traditionally used as the side dish to very flavorful curry type dishes.
