How Do I Make Acapulco Rice?

Here is how you make Acapulco Rice:

In a medium sized saucepan, combine tomato sauce, water, chilli poweder, and diced green pepper and bring to a full boil. Stir in rice. Cover. Stir every so often so rice doesn't stick to bottom. Once rice is cooked, let sit for a few minutes and then add the crushed tortilla chips and cheese.I like to add extra chilli powder because I like mine spicy, but this is a more mild version. Some people also like to serve with lettuce and sour cream. Enjoy!! :)Number of Servings: 4Recipe submitted by SparkPeople user DMAAAC23.
