Here is how you make Easy Curried Rice:

Saut? the diced onion in a large cooking pot with a small amount of olive oil. When tender add crushed garlic. Cook over medium heat for 1 minute stirring consistently to avoid burning. Add the rice, black beans, and corn to the pot and stir to mix ingredients. Sprinkle in the tumeric, cumin, and curry powder. Add salt and pepper to taste. Slowly pour in 4 cups of water and bring to a boil. Once boiling, cover the pot tightly, reduce heat and allow to simmer for 25 minutes or until rice is tender. Serve immediately.
