Add the brown rice and stir until it turns less translucent, about 5 minutes. Add 2-1/2 cups water and stir in the bouilion cubes. Bring to a boil. While you wait for it to boil, add one grated carrot and about 1/2 a large or 1 small grated zucchini. Stir the vegies into the rice. Allow to boil for 1 minute, then cover and reduce heat to simmer. Cook until the rice is tender, about 15-20 minutes. Make sure it doesn't boil dry. This can also be made with white rice but brown is healthier & tastier with a nicer consistency. You can add favorite herbs if you like, prior to simmering.
