Chopped all the vegetables into the same size small pieces (about 1/4" thick by 1/4" long/wide)Put in sesame and chili oil in hot cast iron and swirl. Add onions, carrots, broccoli, pepper, ginger, garlic and celery. Saute until translucent add bacon. Incorporate cooked rice. Reduce pan to medium. Let the flavors come together and mix by spreading out on the cast iron, letting heat for 1 minute then flipping. You may need to deglaze the pan, do so with half the sake. After 5-10 minutes, pull vegetable/rice mixture to the side of the pan, leaving half the cast iron free to scramble the eggs. You are going to scramble the eggs on the cast iron first to make sure they are full cooked before incorporating into rice. Crack both eggs into the cleared side of the pan and continuously stir scrambling the egg. The hot pan should cook them in about 2 minutes then incorporate into the vegetable rice mixture. Deglaze the pan with the remaining sake and add froze peas and cabbage.Turn pan to low-medium heat and pour soy sauce (I prefer low sodium tamari) over the mixture to coat evenly. Continue to stir every 3-4 minutes letting all the excess moisture cook out of the rice/vegetable mixture. You can keep this on low until the rest of your meal is ready just continue to stir every 3-4 minutes to keep a crust from forming on the rice. Enjoy!Serving Size: makes 4 - 1 to 1 1/2 cup servingsNumber of Servings: 4Recipe submitted by SparkPeople user JPHILLIPS14.What's The Nutritional Info For Vegetable Fried Rice? The nutritional information for Vegetable Fried Rice is:
