I added some roasted red peppers to Coach Nicole's very good hummus recipe. The red peppers are very 'wet' so thinned the hummus quite a bit so I had to add more chickpeas just to thicken it up. Next time, I might omit the water. The peppers give a nice sweet flavor to the hummus.Also, I start with beans that I've soaked overnight & cooked. You could get a slightly smoother texture if you had the fortitude to 'skin' the chickpeas. If you cook them from their raw state, this will become clear.

The prep time & cooking time vary depending on whether or not you start with raw chickpeas or not. If you do, soak the 5 cups of chickpeas in a large pot of cold water overnight. Rinse them several times until the water becomes clear. Fill the pot with water to cover the chickpeas by about 3". Cook on high for about an hour, skimming the foam off the top (discard). Immediately run cold water over the beans in the pot, stirring them up (I use my hand). 'Skins' will rise to the top & can be poured off.Add 5 cups of well rinsed (& 'skinned' if you have the time & energy) chickpeas to a large bowl food processor. Add remaining ingredients EXCEPT the water. Pulse processor, checking consistency & adding water to a maximum of 1/4 cup until desired consistency is reached.
