I (5 oz.) pkg. Emerald Pecan Pie Pecans (you don't have to use the whole bag- I also break the large pieces up in my hand before tossing them in)
1 1/2 cups dried cranberries
1/4 extra virgin olive oil
1/4 fresh squeezed orange juice (zest the orange first)
(Salt and Pepper to taste)

Here is how you make Cranberry and Lentil Salad:

Open the package of lentils and put into a large bowl. Break up the lentils with a fork before adding other ingredients. Add the pecan pieces, breaking up the large ones first. Toss in the dried cranberries. Zest the orange over the ingredients in the bowl. In a separate small bowl, pour in the olive oil and the freshly squeezed orange juice, and add a little salt and pepper to taste. Whisk the oil and juice together then pour over the lentils.
