2 oz Pimentos, drained
1/2 cup of purple onion, chopped
1 cup celery, diced

Drain Peas. Add chopped Pimentos, onions, celery.

2/3 cup sugar
2/3 cup cider vinegar
1/2 cup olive oil
1 tsp salt
1/2 tsp black pepper
1-2 cloves of garlic, minced

Combine sugar, cider vinegar and olive oil. Add salt, pepper and minced garlic. Pour dressing over peas and marinate overnight. Drain the dressing and serve.
