1 tbsp butter or margerine
1 - 2 tsp each of Salt and black pepper--suit taste
2 hard boiled eggs, mashed
1 - 2 tbsp mayonnaise
1 - 1 1/2 tbsp yellow mustard
2 - 3 tbsp each sweet and dill pickle relish, (pour a tsp or two or dill pickle juice in for extra zing)
1/2 small onion, chopped

Boil potatoes to tender and eggs to hard boiled stage (yes, separately :-). Pill and mash eggs. Mash potatoes mix-mashing in all ingredients. Should be a medium yellow shade. Will get darker and stronger as it cools. The onion is optional. I usually split it and have a bowl with and one without. Serve hot or cold.
