Once it begins to brown a bit, add the quinoa and water. Bring to a boil for about 3 minutes over medium-high heat, cover and turn heat down to medium-low for about 15 minutes (or until the liquid is completely absorbed.While the quinoa is cooking, dice the tomatoes and cucumber and chopped the olives into small bits.Once the quinoa is cooked, remove from heat and combine all of the veggies and quinoa together in a medium-large bowl.
