I recommend using an 'onion chopper' that you can buy for under $20 at most retail stores...chopping goes much faster. You'll have to use a knife on the cilantro though! Mix all ingredients.It's better to make several hours ahead to allow the flavors to blend, but is good right off the chopping block too.This will keep fresh for about a week. You can adjust the jalepeno to taste.We have also added fresh or frozen corn. The fun thing about this is the variations...try adding mangos, pineapple, zucchini...it's all good!serving size based on approximately 1/2 cup.
