French Onion "Soup"
----------------------------
1 TBSP extra virgin olive oil
3 large white onions, sliced
6 cloves of garlic, peeled and chopped
1/2 TBSP honey
salt and pepper to taste - roughly 1/2 TSP each
3 C low sodium beef broth (separated into 1 C and 2 C)
8 sprigs fresh thyme, chopped (or 1/2 TBSP dried thyme)

1/2 lb. whole wheat pasta, cooked

2 T seasoned breadcrumbs

Here is how you make Healthified French Onion Soup Mac and Cheese:

preheat oven to 350 degrees farenheitFrench Onion "Soup"-----------------------------Heat a high-sided skillet with olive oil over medium heat. Add garlic and onion, and slowly sweat. Add salt and pepper. Stir to combine. Cover, and let cook for about 10 minutes. Add 1 C beef broth and worcestershire sauce. Simmer until liquid is reduced to half, then add the rest of the broth, honey, and thyme. Simmer until liquid is reduced and almost gone.Bechamel--------------While onions are simmering and reducing, heat a pot over medium heat. In a small bowl, combine flour and milk. Whisk until there are no lumps. Heat the flour and milk mixture over medium heat until it becomes thick. Add salt and pepper, to taste. Once thick, add the grated cheeses. Once the "soup" has reduced, add it to the bechamel and stir to combine. Add pasta. In a casserole dish, sprayed with nonstick cooking spray, add the macaroni and cheese.
