Set aside. Dice onions and chop garlic. Set aside. Spray cool pan with PAM cooking spray. Place on medium heat. When hot, add bacon and cook until bacon is brown. Remove from pan. Add olive oil to same pan and pour in onions. Cook until onions are tender. Add garlic. Stir. Place spinach in pan with onions and garlic. Place lid on pan. When spinach wilts a little, add remaining spinach. You may need to add an ounce of water if onions are sticking to pan. Once spinach is soft (3 minutes), remove from heat and stir in bacon. Serve immediately.
