2-bags or 2lbs. fresh spinach, washed and drained
3/4 cup flour
3 eggs
3 egg yolks (if you have them left over, otherwise add two more eggs)
1/4 cup heavy cream
1/4 cup shredded lowfat cheddar cheese (or swiss)
2 tbsp. dried basil
1 tbsp. ground black pepper
salt to taste


How Do I Make Spinach Cake?

Here is how you make Spinach Cake:

Heat oven to 400 degrees. In a bowl, add together the flour, basil, salt and pepper. Wash and drain the spinach; spray the bottom of a large glass casserole dish; place 1/4 of the spinach on the bottom of the casserole. Sprinkle 1/4 of the flour mixture over the spinach. Add another layer of spinach, then another layer of flour mixture. Pour over that half the egg mixture; add another layer of spinach, then flour, then spinach and then the rest of the flour. You might have to press the spinach down - this is typical, don't worry about not having enough room, the spinach will cook down considerably. Just press it so it all fits. Pour the remaining egg mixture over the top, then sprinkle the cheese on top of that. Loosely cover with foil and bake for 20 minutes. Remove foil and cut in half lengthwise, then cross cut six times to create 12 pieces. One serving = 1 piece, but go ahead and try to eat just one piece! Makes a great breakfast food, too.
