This is a very simple spinach recipe that even my greens-hating boyfriend will eat. The parmesan cheese can be reduced for a more low-fat option. I've had gruyere and parrano on this as well and it's amazing! I usually just season with salt & pepper but I've added garlic powder, green onion, and italian seasonings as well. Add spinach and mix (note: spinach should almost be dry to the touch, so squeeze as much as you possibly can). Remove from heat. Stir together spinach mixture, beaten eggs and 1/2 of the parmesan cheese. Season with salt & pepper. Bake in glass baking dish (about 8x8) at 375 for 10-15 minutes.Note: the key is to squeeze squeeze squeeze the spinach unless you like soggy spinach.
