Crush the garlic into the olive oil, stir and set aside. 2. Wash the spinach and drain well, pat dry or use a salad spinner to remove the excess water.3. Steam spinach until slightly wilted, shouldn't be more than 2 or 3 minutes- watch closely!!4. Drain off excess water from spinach and place in a bowl. Stir in olive oil and garlic first and then the parmesan.
