Here is how you make Kale, Mushroom, and Onion Stuffed Sweet Potatoes:

Bake sweet potato until soft all the way through at 350 degrees. This could take an hour or longer, start checking at 45 minutes. While potatoes are baking, rinse and tear kale leaves from stems, set aside. Slice mushrooms and onions. Sautee onions in a pan with garlic and coconut oil or salted butter. Add mushrooms when you begin to see through the onion pieces. Sautee until the mushrooms start to brown. Set aside. Put 1/2 cup of water in the bottom of the pan and add some vegetable seasoning. Place kale in the pan once the water is hot and cook down the kale. Add more if you like lots of kale. Add the mushrooms and onions to the kale for 5 to 7 minutes. Slice the sweet potatoes length-wise and scoop out the flesh in a bowl. Set aside. Leave a little flesh in the boat to cushion the kale mixture. Fill the sweet potato boats with the kale mixture. Mix the set aside sweet potato flesh with a small amount of butter and salt. Put one tbsp. of potato flesh on top of the kale mixture in the sweet potato boats. Top with fresh thyme and rosemary.
