This recipe makes approximately 2 cups of tahini, or 32 - 1 tablespoon servings.Heat a large skillet (cast iron preferred) on low.Add sesame seeds to skillet. Toast for about 10 minutes, stirring frequently.The seeds should develop and nice aroma and turn a shade or two darker. Do not brown them!Let cool for a couple of minutes.Add toasted sesame seeds to food processor bowl with steel blade inserted. Add oil.Process the seeds, scraping down every so often.You will need to process for five minutes or more. Five minutes seems to be the miracle point where the hulls suddenly break down and it becomes a smooth, silky paste.Keep tahini in a jar in your refrigerator.HINT: When making tahini, I always put most in a jar, leaving just enough in the food processor to make a fresh batch of hummus.
