Use a small dice, no larger than about a half inch. The exception, of course, is the corn which you slice off the cob raw.After all your dicing, heat the oil in a large skillet and add the minced garlic cooking for about two minutes. Add the vidalia onion and cook for about another two or three minutes. Add the remaining vegetables and the italian seasoning. Cook for about five minutes lightly covered (I use foil because I do not have a lid large enough for my large skillet), stirring occasionally.
