Here is how you make Veggie Orzo:

Chop veggies into bite-sized pieces.Mince garlic.Melt butter over medium-high heat and saute veggies and garlic about 5-7 minutes.Add uncooked orzo and saute until orzo is lightly browned.Add Vegetable broth and upon boiling, reduce heat to medium, cover and simmer 15-20 minutes or until pasta is tender and most liquid is absorbed.Stir in black pepper and lemon juice and serve.Serving Size: 4 large side servings (will be bread and veggie plate portions!)Number of Servings: 4Recipe submitted by SparkPeople user PURKEY01.
