This is the plainest and simplest version yet. (it's different every time). I freeze it in portions and use it as a quick and easy base for a meat or other fresh steamed vegetable. Because it's plain, I cad add flavorings when I am ready to eat, such as tomato sauce, or ginger & garlic, or basil, etc.

Here is how you make KCS's Veggie Pot - July (1 cup serving):

Using a food processor, (1) shred the cabbage, (2) slice the celery and the carrots.Saute the frozen onion in 1 TBS olive oil. Remove after about 7 minutes. Add remainder of olive oil, add carrots and celery. Cook on med. heat for about 15 minutes, stirring every few minutes. Add the shredded cabbage. On top of that add the frozen peas, the frozen corn, then the cooked onions on top. Add 1.5 cups of water. Cover with lid and cook for another 5 minutes or so. Then stir it well. Cook, and continue to stir in 5 minutes then again in 5 minutes. Lower temp to lowest setting. Cook for another 20 minutes or so. Turn off heat and leave for another half to one hour. You can adjust cooking time if you like a more firm vegetable mix. These instructions will give you a very very soft vegetable mix. It's plain, but that's the idea.
