3 cloves garlic chopped
1/4 cup olive oil
1 can petite cut diced tomatoes or 2 cups plum tomatoes quartered
2 T balsamic vinegar
1/4 cup fresh basil, chopped

Here is how you make Veggie Side Dish:

Preheat oven to 425. In 10 x 15 pan, toss together eggplant, zucchini, onion, garlic and olive oil. Put in oven and cook for 30 mins. In the meantime, drain some of the juice off the tomatoes (if using canned) then toss with basil and 2 T balsamic vinegar.
