Adapted from a Slimpalate Paleo recipe, these fritters are delicious! To be grain-free, use 1/4 cup almond flour. You can also use gluten-free bread crumbs in place of the flour. If the batter is too "wet", add more of the crumbs/coating mix/almond flour 1 tablespoon at a time until it reaches a thick enough consistency to bind the ingredients.

2-1/3 Tablespoons Virgin Olive Oil (for frying)

In a food processor bowl, pulse zucchini chunks and onion until zucchini looks shredded. Pulsing the zucchini will not create much liquid. If the zucchini looks wet, wrap in a towel and squeeze out excess liquid. Whisk egg, salt, pepper and shredded cheese together; stir in coating mix or crumbs then add zucchini and onion mix. Heat large cast iron skillet and when a drop of cold water "sizzles" in the pan, add the oil and heat until oil just barely smokes. Use 1/4 cup batter for each fritter.
