Wash kale and remove stems. Cut bacon in small pieces and brown and drain on paper towels. Reserve fat. Saute onion in bacon fat until soft, add garlic, kale, salt, pepper. Saute for 5 minutes. As greens wilt, add hot sauce, lemon juice and water. Cover, reduce heat to medium and allow to steam for 10 minutes, Stirring periodically.
