6 cups brussels sprouts
2 slices of thick-cut bacon cut into lardon
1 shallot, finely diced
1 garlic clove, mashed
1/2 cup of broth (chicken, vegetable, what ever you have is fine - sub bouillon if you don't have the real deal)
4 Tbsp pine nuts (pignoli)
salt and pepper


How Do I Make Brussels Sprouts with Bacon and Pinenuts?

Here is how you make Brussels Sprouts with Bacon and Pinenuts:

Trim bases and remove loose/damaged outer leaves from sprouts. Slice the sprouts to about 1/8-1/4 thick (big sprouts get sliced about 4 times, smaller ones 3) or put them through your food processor with the thick slice attachment. Toast pine nuts and reserve. (I do this in a toaster oven). Watch very carefully! Pine nuts burn very easily, and toast very quickly. Pull them just before you think they're done - they continue to brown for a minute after you take them out.Heat a thick-bottomed pan/pot (I use my enameled cast iron dutch oven) to medium and add the bacon. crisp bacon up and remove to a paper towel to drain. Reduce heat to medium-low and add shallots. Stir to bring up some of the bits off the bottom of the pan, then add the garlic and stir briefly to take the edge off it before tossing in the prepared sprouts. Stir everything up and add the broth and stir again, making sure there is no bacon-y goodness left in the bottom of the pan. Cook uncovered about 5 minutes.Give a few good cranks of pepper, stir and test a slice. Add a bit of salt/more pepper to your taste. You will be adding the bacon back, so don't over-salt.Cook another 5 minutes, stirring a couple times and test another slice, adjusting the seasoning. They should be done by now, but if not, just keep cooking until they are at the softness you like (I like then pretty firm). Add the bacon and pine nuts, stir one last time and put in a serving dish.Serving Size:?Makes 12 servings
