Mix together honey and warm water. Dissolve yeast and let proof.Mix together flour, salt. Mix in yeast mixture into flour until a dough is formed. Knead dough until smooth.Portion dough into 12 equal sized portion and shape into bagel shape with a hole in the middle. Let rise for 30 minutes.Meanwhile, bring a gallon of water to boil Add 1 tbsp of sugar and lower to a simmer. Boil bagels in batches of 3 ~ 4 (bagels will swell in water) for 7 minutes total, turning once.
