Place beans in a bowl and cover with water. Soak overnight.Heat beans in same water to boiling. Cover and let simmer until tender, approx. 1 to 2 hours.Drain off water, reserving liquid. Layer beans, onion and meat in bean crock.Mix reserved liquid, brown sugar, molasses, salt, mustard and pepper. Mix together until smooth. Pour over beans.
