Here is how you make Baked Parmesan Tomatoes:

1. Preheat oven to 375.2. Wash and core 3 large or 4 medium tomatoes. Slice each into 3 or 4 large slices and place into baking pan in single layer and set aside. 3. Place bread into blender or food processor to grind into bread crumbs - (you could purchase bread crumbs but this is less expensive, less calories and less sodium).4. Grate Parmesan cheese.5. In a small bowl, mix the bread crumbs with the Parmesan cheese. You could add some Italian seasoning to this if you wish. Sprinkle this mixture on top of the tomatoes in the oven dish. Lightly top each tomato with the extra virgin olive oil.6. Bake until the tomatoes are tender but the top will be a little crunchy - should take about 15 to 20 min. depending on how ripe the tomatoes are and how thick you sliced them.
