I would suggest substituting the creme fraishe for greek yoghurt if you don't have any, the white bread for whatever bread you have and the mozerella cheese for regular cheese. I also liked adding various seeds on top among other things. It all comes down to personal preference really.I didn't care much for this dish, but my mum liked it. Its a good side dish or something to make if you aren't that hungry. 1 Butternut Squash (about 675g in weight)
1/2 tsp paprika
3 tbsp snipped fresh chives
3 tbsp low-fat creme fraiche
1 thick slice white bread, crumbled into breadcrumbs
generous knob of butter
25g grated parmesan


How Do I Make Baked Buttery Squash?

Here is how you make Baked Buttery Squash:

1. Preheat the oven to 200 degrees (unless you are American, than its double that I think). Halve a squash lengthways, then scoop out the seeds and fibres, then discard. Season (salt and pepper) the squash well and put in a roasting tin half full of water and cover with tin foil, and bake for forty minutes or until tender (or you could be cool like me and use a glass dish with no tin foil- just be careful, because it could explode)2. While the squash is baking, mix the paprika, chives and creme fraiche and set aside. Once the squash is done baking, take it out of the oven and drain the water. Leave the oven on though because the squash will be going back in.3. Scrape the flesh of the squash into a bowl and mix with the previous ingrediants.Be sure to leave a thick layer of skin on the squash so you can stuff the mixed ingrediants back inside.4. Pile the mixture into the squash shells. Mix the breadcrumbs, butter and parmesan and sprinkle on top. 5.
