Here is how you make Dewey's Baked Winter Vegetables:

Preheat oven to 400 degrees.Cut up all vegetables.Drizzle olive oil in bottom of 7" x 11" glass pan, or an 8" round pan.Add vegetables to pan.Season with desired seasonings. Cover with aluminum foil and place in oven for 40 minutes. About half way through baking time, check veggies and stir. Re-cover and place back in oven for remainder of baking time.
