Here is how you make Twice Baked Yams:

1/ Bake yams 350 till you can put a fork through them2/ Let yams cool, cut yams in half, length wise - scrape out inside of yams leaving a small edge - put insides of yams in a bowl for later. Mash the yams - however you like, chunky or smooth.3/ In frypan add garlic, chopped onion and spinach - add salt pepper to taste, cook on med till spinach is wilted. I do not use oil to cook with - just a good ole non stick fry pan.4./ Add the wilted spinach concoction to the yams, mix. Add cottage cheese. Mix. Salt and pepper or season to taste. 5./ Scoop mixtures in yam skins. *Garnish if desired* Place on cookie sheet.
