1 large egg
2 bananas, ripened, mashed
1/2 cup dried cranberries (equivalent is Craisins)
1 clementine, peeled and diced

Here is how you make Banana Bread with Dried Cranberries and Clementine:

Preheat oven to 350 degrees. Spray a 9x5 loaf pan with cooking spray and flour and set aside.In a small bowl mix together the flour, baking powder, salt and cinnamon.In a large bowl mix together the sugar, applesauce, egg, bananas, cranberries and clementine. Then mix in the flour from the small bowl and combine. Do not over mix! Pour into prepared loaf pan and bake till a toothpick comes out clean in the center. This could take anywhere from 40-50 minutes as ovens vary. Allow bread to cool in pan for 5-10 minutes, then carefully take it out of the pan onto cooling rack.
