4 overripe bananas

? cup (1 ? sticks) unsalted butter, melted and cooled
3 eggs
? cup unsweetened applesauce
1 teaspoon pure vanilla extract
? cup Chia seeds
? cup chopped almonds

Here is how you make Banana Nut Bread with Chia Seeds:

1. If using the OPTIONAL TOPPING, prepare it and set aside.2. Preheat oven to 350?F and lightly butter bread pan.3. In a large bowl, combine the flour, baking soda, cinnamon, and salt; set aside.4. Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture.5. With an electric mixer, whip the remaining bananas and agave nectar together for a good 3 minutes6. Add the melted butter, eggs, applesauce and vanilla then beat well, scraping down the sides of the bowl once or twice.7. Mix in the dry ingredients just until incorporated.8. Fold in the Chia seeds, nuts and the mashed bananas with a rubber spatula.9. Spoon the batter into two small bread loaf pans. Give them a rap on the counter to get any air bubbles out.10. Sprinkle each loaf with the OPTIONAL TOPPING, if desired.11. Bake until a toothpick stuck in the center comes out clean, 25 to 30 minutes.12. Let cool for a few minutes before turning the muffins out.13.
