2 large bananas (mash 1 and chop the other)
1 large egg
3 tbsp peanut butter (chunky is lovely, but use your favourite kind)
1 tsp Vanilla extract
1 cup milk (Nutritional info is for 1%)
1/4 cup sugar (brown gives great flavor to this)
1 cup flour (I used multigrain for extra flavour and crunch)
dash of salt (needs just a little to bring out all the flavours)
2 tsp baking powder


How Do I Make Peanut Butter Banana Pancakes?

Here is how you make Peanut Butter Banana Pancakes:

Mash one of the bananas and chop the other into small chunks. Add the egg, peanut butter and vanilla. Mix really well til the peanut butter is well incorporated. Add the milk and sugar and mix well till all liquid ingredients are well mixed. Mix the flour, salt and baking powder in seperate bowl. add to liquid ingredients and mix well. Stir in the chopped banana.Cook on medium hot frypan or pancake griddle for about 2 min per side. 1/2 cup of the batter makes a pancake about 8 inches. Cook the first side till the top is bubbly and beginning to look dry around the outside. flip and cook second side till its browned.Serve these with a drizzle of honey, maple syrup or jam.
