This is a small recipe, to make only 4 biscuits (just my hubbie and I), but can be doubled or tripled to make more.

Ingredients:
1 cup chilled Ultra-light self-rising baking flour
3 tablespoons plus 1 tablespoon butter
1 teaspoon baking powder
1/2 teaspoon salt
2/3-3/4 cup fat free buttermilk

Directions:
Mix dry ingredients together. Then, slice the 3 tablespoons butter into mini-pats and cut them into the flour with a pastry cutter or fork, until mixture resembles pebbles (like a pre-pie crust).
Add 2/3 cup buttermilk and mix. Mixture should be fairly sticky and wet looking, if not, add another splash or two of the buttermilk.
Time to get your hands dirty. Turn the dough out onto a floured surface, sprinkle top with flour, and hand knead lightly approximately 4 or 5 times. Press into thick formation and cut into biscuits with 2-2 1/2 inch glass or cookie cutter.
Bake at 400 degrees for 20 minutes. (Greased or ungreased cookie sheet, no matter. Greased for added crisp.) Brush with remaining 1 tablespoon melted butter immediately after pulling from oven.
