Preheat oven to 450F. Line a baking sheet with parchment paper and set aside.Whisk together the flour, xanthan gum, baking powder, baking soda, sugar, and salt. Add the butter and cut in with pastry cutter or fork. Add buttermilk and stir to combine. Dough will be sticky.Place a second sheet of parchment paper on your work surface, and dust with more GF flour. Transfer the dough to the floured work surface and pat into a 1" thick disk. Using a 2" biscuit cutter, cut out as many biscuits as possible.
