Here is how you make Genuine Southern Buttermilk Biscuits:

Preheat oven to 425. Put vinegar into a measuring cup and add milk until it measures one cup, and return to the fridge for at least 10 minutes. In a large bowl, combine flour, baking powder, baking soda, and salt. Mix lightly and then add shortening, using fingers or a fork to work it into the dry mix until it has the consistency of crumbs. Stir the milk, which has become buttermilk now. In the dry mixture, make a well in the center and slowly add half of the liquid and then then stir it. Keep adding liquid until the dough is slightly sticky, but not wet. You may not need to use the entire cup of buttermilk for this, so stop when it gets to the right texture. Once the dough is mixed thoroughly, place it on a floured surface and roll it out to about 1" thick, then fold it in half and repeat this two more times so that it is layer. Then roll it out a final time to about 1" and cut out as many biscuits as you can - gather and roll again until you are out of dough. Place on baking sheet and bake for 10 minutes. After that if you check and the bottoms are done, but the top is not, turn your oven to broil and leave them for 2-3 more minutes while watching closely to make sure they don't burn.
