1/2 tsp salt
1 1/2 tsp baking powder
4 egg whites
1/3 to 1/2 cup full-fat buttermilk (can be hard to find non-lowfat variety)

Here is how you make Kari's Own Low Carb Biscuits:

Mix up the "flour" substitutes, salt, and baking powder. You can sift it if you want, but I didn't, with no ill-effects. Besides, sifting almond meal is... not easy.Cut the COLD butter into the mixture. Put in refrigerator for an hour or so. Really. The fat has to be super cold for this to come out right.When the hour is up, but before taking mixture out of refrigerator, preheat oven to 400 degrees. Grease up 12 muffin cups. These STICK. I mean, really badly. So grease the heck out of them. I wouldn't use liners because, well, they'll stick so bad, you'll lose half your muffin!Beat egg whites until foamy.NOW take the mixture out of the refrigerator, mix in with the egg whites, and add as much buttermilk as you need to have a muffin-y batter. I didn't measure, but I'm guessing around 1/3 to 1/2 cup.Bake for about 12 minutes. The tops won't get all that brown, but the sides and bottoms will.
