1 T baking powder

1 C fat free, light vanilla yoplait
4 T butter, divided
1/4-1/2 C milk
3/4 C blueberries


How Do I Make Blueberry Scones?

Here is how you make Blueberry Scones:

In large bowl, sift together 2 C flour, 1/4 C suger, 1 T baking powder, and 1/2 tsp. salt. Melt 3 T butter and add to 1 C yogurt in separate bowl. Stir wet mix into dry mix until moistened, adding 1/4 -1/2 C milk until dough holds together. (It should be a bit sticky). Gently add blueberries.Divide dough in 2 parts. Roll each into a circle about 1/2 inch thick. Cut each circle into eight wedges. Put on baking pan lined with parchment. Brush tops with remaining 1 T butter and sprinkle with a little sugar if desired. Bake at 425 for 10-11 minutes or until lightly browned. Eat hot.Variations: Make chocolate chip or other fruit scones (strawberries and cream?).
