1/2 small onion chopped finely
1 plum tomato chopped very small
dried chives
extra old cheddar 50 g
1 zucchini grated
1/2 cup Naturegg Egg whites
2 tbsp bacon finely chopped

Dry fry bacon, onion, mushrooms, tomatoes and spinach. Let cool. Grate zucchini, Beat eggs and egg whites, add chives. Spray a 12 muffin pan and put a little of the cooked ingredients into the bottom of each of the 12 (holes?) of the muffin tin. Top with the zucchini and cheese and then pour wet ingredients evenly into each one. Bake approx. 45 minutes or unitl set.
