This should make about 4-6 servings. I like a lot of collards so my serving sizes may be a bit on the large side. Slice the onions and add them with the olive to a large pan. I used a deep non-stick skillet with a lid. Sautee the onions until they are transluscent. Add your seasonings here. This is where the cabbage and collards will get their flavor. To Prep the Cabbage: Slice as if you're making cole slaw only larger pieces. To prep the collards: Strip the leaves from the stalk. Stack and roll like a cigar and cut into 1/2" to 1" strips. Wash thoroughly! Add the cabbage and let simmer. Add the collards. Stir, cover and simmer. Add a little water as needed. Simmer for as long as needed according to whether or not you like your cabbage and collards crunchy or soft. Drop a line if you need clarification.
