Here is how you make Cajun Watermelon Relish:

Diced rind. Measure 2 cups.Place in a large bowl. Combine water and salt. Pour over rind, cover and refrigerate for at least 8 hours. Pour rind into a colander, rinse under cold water and drain well. In a large pan, combine spice, vinegar and sugar. heat to boiling. Stir in watermelon, peppers, onion and jalapeno. Return to boiling., reduce heat , cover and simmer for 25 min.
