Place carrots and 1/3 cup water in large saucepan & cover. Bring to a boil then simmer on low 8-10 minutes, until tender; drain. Heat oil in large skillet over med-high heat. Add onions, cook & stir 6-8 minutes or until golden brown. Stir in sugar, vinegar and spices; simmer 1 minute. Remove from heat and stir in carrots an walnuts. Makes about 4 cups.
