Preheat oven to 350 degrees. With olive oil, grease an 8x10 baking pan. Place vegetables in sauce pan and heat through. You may steam the vegetables in a steamer to prep the vegetables. Dice the Velveeta cheese. Crush crackers. Melt margarine. Pour melted margarine over crushed crackers and mix to moisten the crumbs. Once vegetables are cooked/steamed, place in baking dish.
