In a large skillet, caute carrots, with 3 tsp butter and a bit of onion powder or minced onion until tender. Transfer to greased 1-1.2qt. baking dish. Top with .5 cup cottage cheese and 1/2 cup shr. cheddar. In the same skillet, saute broccoli in the remaining butter for 1 minute. Place over cheese, pour broth over all.Cover and bake at 350 degrees F for 25 minutes. Uncover, sprinkle with remaining cheddar. Bake 5 minutes longer or until cheese is melted and vegetables are tender. Season with salt and pepper.
