1) Chop onion and garlic and heat in a skillet until the onions begin to get soft.2) Pour in stock and lentils with seasonings and stir with onions and garlic. Bring to boil. Cover and reduce to a low boil for 40 mins (lentils will be soft and liquid boiled off).3) Meanwhile chop carrots and potatoes. Steam for 10 mins or until they are beginning to get soft. 4) Chop leeks into rings. Only chop and use the white root portion. Do not use the thick green leaves. You can remove the leaves one at a time and get more root part. Rinse them well to remove all the dirt. 5) Steam the leeks for 5 mins until they begin to get soft.6) Arrange the steamed vegetables in the bottom of a casserole dish. 7) Preheat oven to 400 degrees.8) When lentils are soft remove them from heat and either mash them or food process the mixture to a puree.9) Cover the steamed vegetables with the lentil mixture and smooth flat.10) Cover the casserole with chopped nuts (I use honey roasted, the sweetness is a nice flavor to add).11) Bake at 400 for 20 mins. The top will be baked.*Will make 8 small servings or 4 large servings.**Add cubed chicken, turkey, or shrimp to make a meal with meat.
